One Pan Creamy Orzo with Broccoli, Parmesan and Pine Nuts

One Pan Creamy Orzo with Broccoli, Parmesan and Pine Nuts – delicious, one pot, healthy vegetarian meal 😋

Serves: 2-3

Cook Time: 15


  • 2 cloves garlic, crushed
  • 1 small onion, finely chopped
  • 2 cups broccoli, finely chopped
  • 0.5 cup orzo
  • Salt and pepper to season
  • 500ml vegetable stock
  • Olive oil
  • 3 tbsp mascarpone
  • 0.5 cup parmesan, grated

  1. Boil Kettle for stock
  2. Sauté the chopped garlic and onion in olive oil for 2 mins .
  3. Stir in Orzo ensuring it gets covered in oil and onion.
  4. Add the hot stock and cook covered for 5 mins.
  5. Add the broccoli and mascarpone and cook stirring well for another 3 mins adding more stock if needed.
  6. Finally add the Parmesan and stir in.
  7. Plate up and top with toasted pine nuts. Enjoy 🤗
