The Go To Salad

It might seem strange sharing a recipe for a salad, but this has been our go to salad for a long time. My son actually thinks of this as a treat he loves it that much. It never fails to satisfy.

The Go To Salad


  • Mixed baby leaves
  • Red onion, finely sliced
  • Beetroot, chopped
  • Cucumber
  • Pickles
  • Roast red peppers
  • Mixed seeds
  • Chopped dried cranberries
  • Chopped walnuts (or any other nut)
  • Parmesan cheese
  • Extra virgin olive oil
  • Balsamic vinegar


  1. On a large platter, start by adding the leaves, then the chopped cucumber, tomatoes, onions, cranberries, nuts, beetroot, and finally using a vegetable peeler, long slivers of parmesan.
  2. Finally in a small jar with a lid, fill two thirds with olive oil and the remainder with balsamic vinegar, shake with the lid on and pour over the salad.

    Enjoy immediately.
