It might seem strange sharing a recipe for a salad, but this has been our go to salad for a long time. My son actually thinks of this as a treat he loves it that much. It never fails to satisfy.
INGREDIENTS
- Mixed baby leaves
- Red onion, finely sliced
- Beetroot, chopped
- Cucumber
- Pickles
- Roast red peppers
- Mixed seeds
- Chopped dried cranberries
- Chopped walnuts (or any other nut)
- Parmesan cheese
- Extra virgin olive oil
- Balsamic vinegar
METHOD
- On a large platter, start by adding the leaves, then the chopped cucumber, tomatoes, onions, cranberries, nuts, beetroot, and finally using a vegetable peeler, long slivers of parmesan.
- Finally in a small jar with a lid, fill two thirds with olive oil and the remainder with balsamic vinegar, shake with the lid on and pour over the salad.
Enjoy immediately.
