Homemade Tomato Sauce

Very often I find less than perfect tomatoes at home and not wanting to waste them, I fire them into a pan and make my own sauce.

Delicious for many dishes and even spread on toasted pittas with toppings of your choice for a healthy snack.

Make batches and freeze flat in zip-lock bags in portion sizes.

Cook Time: 20

Ingredients

  • 600g tomatoes halved
  • 1-2 finely chopped onions
  • 2 garlic cloves, minced
  • salt and pepper to season
  • 1 tbsp good balsamic vinegar
  • 1.5 tsp mixed herbs
  • 1 tbsp olive oil

Instructions

  1. Heat the olive oil and gently fry the onion, tomatoes and garlic with the balsamic vinegar.
  2. Season with salt and pepper along with the herbs of choice. I use oregano, mixed herbs, basil and some garlic powder.
  3. Allow to cook gently until soft and the mixture thickens slightly and then blitz with a hand blender.
  4. Freeze in small container sizes so you can use as needed.
