Homemade Tomato Sauce

A great way to use up less than perfect tomatoes and can be used for so many dishes from bolognese to homemade pizza.
Prep Time: 2 mins | Cook Time: 20 mins

Very often I find less than perfect tomatoes at home and not wanting to waste them, I fire them into a pan and make my own sauce.

Delicious for many dishes and even spread on toasted pittas with toppings of your choice for a healthy snack.

1. Heat some olive oil and gently fry the onion, tomatoes and garlic with the balsamic vinegar..
2. Add in salt and pepper along with some herbs of choice. I use oregano, mixed herbs, basil and some garlic powder.
3. Allow to cook until soft and then blitz with a hand blender.
4. Freeze in small container sizes so you can use as needed.

tomatoes halved
finely chopped onion
garlic clove minced
salt + pepper
mixed herbs of your choice
1 tbsp good balsamic
