tomato and pepper sauce

Tomato & Pepper Sauce

This versatile sauce makes a great base for all sorts of savoury meals. I use it for meatballs and a soup and also for mixing with homemade tomato sauce for Mozzarella Chicken.

Ingredients

  • 2 medium red onions, peeled and finely chopped
  • 2 garlic cloves, peeled and finely chopped
  • 2 tbsp olive oil
  • 3 peppers, any colour, deseeded and cut into chunks
  • 1 x 400g tin chopped tomatoes
  • 2 tsp paprika
  • 1/2 tsp chilli flakes
  • salt and black pepper to taste
  • 100ml water

Instructions

  1. Place a pan over a medium heat and sauté the onions and garlic for 3-4 minutes until soft.
  2. Add the peppers, tomatoes, paprika, chilli flakes and water and stir to combine. Cover with a lid and simmer for 15 minutes, stirring halfway. Season with salt and freshly ground black pepper.
  3. You can leave it chunky or blitz with a hand blender.
