Apple Sponge Pound Cake

A delicious light and fluffy apple sponge cake that’s quick and easy to make. A definite family favourite in our house.

This cake reminds me of the apple sponge Mum used to cook for us in an oven tray – only because there was so many of us is disappeared in a flash!

Leave the apples chunky so you get a nice hit of apple!

Serves: Serves 6-8
Prep Time: 10 mins
Cook Time: 50-55 mins

Ingredients

  • 2 large eggs
  • 3/4 cup (150g) caster sugar
  • 1 cup (226g) plain whole milk yogurt, regular or Greek (or vanilla skyr)
  • 1/2 cup vegetable oil, canola oil, or olive oil, plus more for coating the pan
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp salt
  • 192g plain all-purpose flour
  • 3 peeled and chopped cooking apples
  • lemon juice (to stop apples browning)

Instructions

  1. Preheat a fan oven to 180 deg C. Line a loaf tin with greaseproof paper.
  2. Sieve flour, baking powder and salt into a bowl.
  3. In another bowl, add eggs, sugar, oil, vanilla and yogurt.Then add in the chopped apple.
  4. Mix the wet with the dry ingredients.
  5. Bake for approximately 50-55 minutes. Check with a skewer in the middle – it should be dry.
  6. Leave to cool around 5 minutes before removing from the tin and greaseproof paper.
