Cheese and Chive Soda Bread
Got inspired for this recipe out on a walk with my good friend Audrey – chatting about food as we do!
As I have abundant chives in my tiny veg garden, I’m always trying to find ways to use them more. This simple recipe is quick to make and delicious. Its nearly even better toasted and smothered in real butter.
Can be frozen, just be sure to wrap well in foil and cling film.
Ingredients
- 375ml buttermilk
- 400g plain flour
- 1 tsp breadsoda
- 1 tsp salt
- 1 cup grated mature cheddar
- 1/2 cup chives, finely chopped
Instructions
- Add flour, salt and breadsoda to a bowl, mix to combine.
- Add in cheese and chives before adding the buttermilk. Mix to combine to a wet dough.
- Shape on a floured surface into a round and bless the top with a cross (an Irish tradition that lets out the devil out)
- Place on a floured baking tray and place in a preheated oven at 170C for 30 minutes. Wrap in a clean tea towel and allow to cool.
