Homemade Tomato Sauce
Very often I find less than perfect tomatoes at home and not wanting to waste them, I fire them into a pan and make my own sauce.
Delicious for many dishes and even spread on toasted pittas with toppings of your choice for a healthy snack.
Make batches and freeze flat in zip-lock bags in portion sizes.
Ingredients
- 600g tomatoes halved
- 1-2 finely chopped onions
- 2 garlic cloves, minced
- salt and pepper to season
- 1 tbsp good balsamic vinegar
- 1.5 tsp mixed herbs
- 1 tbsp olive oil
Instructions
- Heat the olive oil and gently fry the onion, tomatoes and garlic with the balsamic vinegar.
- Season with salt and pepper along with the herbs of choice. I use oregano, mixed herbs, basil and some garlic powder.
- Allow to cook gently until soft and the mixture thickens slightly and then blitz with a hand blender.
- Freeze in small container sizes so you can use as needed.
