Low Carb Mediterranean Mozzarella Chicken
I came across this recipe early this year when I started my Fast800 journey. It has been adapted from the original on the Fast 800 original recipe.
I made this using half my own tomato sauce and half of the tomato & pepper sauce from the Fast 800.
When you make the pepper sauce and your own tomato sauce, I freeze it in small containers.
Ingredients
- Half of tomato & pepper sauce and half of homemade tomato sauce
- 2 chicken breasts, pounded to equal thickness
- grated mozzarella cheese
- some thickly sliced courgettes
Instructions
- Place the flattened chicken breasts into an oven dish.
- Layer the courgettes on top, then spoon over the thick sauce mixture, topping with generous amount of mozzarella.
- Bake in a preheated oven at 180 degree (fan) for 40 minutes.
- Enjoy with some steamed greens for a delicious fulfilling meal.
