One Pan Creamy Orzo with Broccoli, Parmesan and Pine Nuts
One Pan Creamy Orzo with Broccoli, Parmesan and Pine Nuts – delicious, one pot, healthy vegetarian meal 😋
Ingredients
- 2 cloves garlic, crushed
- 1 small onion, finely chopped
- 2 cups broccoli, finely chopped
- 0.5 cup orzo
- Salt and pepper to season
- 500ml vegetable stock
- Olive oil
- 3 tbsp mascarpone
- 0.5 cup parmesan, grated
Instructions
- Boil Kettle for stock
- Sauté the chopped garlic and onion in olive oil for 2 mins .
- Stir in Orzo ensuring it gets covered in oil and onion.
- Add the hot stock and cook covered for 5 mins.
- Add the broccoli and mascarpone and cook stirring well for another 3 mins adding more stock if needed.
- Finally add the Parmesan and stir in.
- Plate up and top with toasted pine nuts. Enjoy 🤗
