Apple Sponge Pound Cake
A delicious light and fluffy apple sponge cake that’s quick and easy to make. A definite family favourite in our house.
This cake reminds me of the apple sponge Mum used to cook for us in an oven tray – only because there was so many of us is disappeared in a flash!
Leave the apples chunky so you get a nice hit of apple!
Ingredients
- 2 large eggs
- 3/4 cup (150g) caster sugar
- 1 cup (226g) plain whole milk yogurt, regular or Greek (or vanilla skyr)
- 1/2 cup vegetable oil, canola oil, or olive oil, plus more for coating the pan
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1 tsp salt
- 192g plain all-purpose flour
- 3 peeled and chopped cooking apples
- lemon juice (to stop apples browning)
Instructions
- Preheat a fan oven to 180 deg C. Line a loaf tin with greaseproof paper.
- Sieve flour, baking powder and salt into a bowl.
- In another bowl, add eggs, sugar, oil, vanilla and yogurt.Then add in the chopped apple.
- Mix the wet with the dry ingredients.
- Bake for approximately 50-55 minutes. Check with a skewer in the middle – it should be dry.
- Leave to cool around 5 minutes before removing from the tin and greaseproof paper.
