Banana, Honey And Cinnamon Muffins

I made these little cakes today and they were really delicious, not too sweet ! they also freeze well and are a good way to use up bananas that are near the end of their days.

Prep Time: 10 mins
Cook Time: 15-20


  • 125g self raising flour
  • 125g butter, softened
  • 2 eggs beaten (room temp)
  • 2 tbsp runny honey
  • 1 banana, mashed
  • 1 tsp cinnamon


  1. Preheat oven to 180 deg C, then line a bun tin with paper cases.
  2. Spoon mixture into prepared cases and bake for 15-20 minutes until well risen and golden. If making mini size, adjust cook time accordingly.
  3. Remove from oven and transfer to a wire rack. Heat some honey until runny and brush over top of cupcakes while still warm. Can be frozen once cooled.
