Cranberry and Orange Muffins

These are delicious little muffins, definitely worth trying out.

Cook Time: 15-20


  • 2 cups flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup cranberries (fresh or frozen)
  • 1 egg
  • 3/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1 tsp grated orange rind


  1. Preheat the oven to 180 deg C.
  2. Combine dry ingredients and add in the cranberries.
  3. In a separate bowl, beat egg, orange juice, oil and orange rind.
  4. Add wet to dry ingredients all at once and stir.
  5. Spoon into greased muffin cups (fill 3/4 full).
  6. Sprinkle some sugar on top.
  7. Bake for 15-20 mins till lightly browned and firm to the touch.
