Creamy Leek & Potato Soup

A surprisingly delicious low calorie soup in found in the Fast 800 recipes. I really didn’t think it was going to be as good as it was given the ingredients – but I was really impressed.

The original recipe said it served 4 but I never liked huge bowls of soup. When I make it I get 8 servings as I use one of my many ‘small’ bowls (yes I have quite a collection – future post coming on that!)

A small bowl equates to only 105 calories (that’s three kitchen utensil spoonfuls).

Serves: 6-8
Prep Time: 10 mins
Cook Time: 12-15

Ingredients

  • 500g Leeks
  • 500g Potatoes
  • 1L Vegetable stock
  • 60ml Light cream
  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes and leeks.
  2. Place the potatoes and leeks into the hot stock.
  3. Bring to the boil and leave to simmer for 10-12 mins or until the potatoes are tender.
  4. Blend the soup with a hand blender and stir in the cream, Finish with salt and pepper to taste.
