Creamy Leek & Potato Soup
A surprisingly delicious low calorie soup in found in the Fast 800 recipes. I really didn’t think it was going to be as good as it was given the ingredients – but I was really impressed. The original recipe said it served 4 but I never liked huge bowls of soup. When I make it I get 8 servings as I use one of my many ‘small’ bowls (yes I have quite a collection – future post coming on that!) A small bowl equates to only 105 calories (that’s three kitchen utensil spoonfuls).
- Peel and chop the potatoes and leeks.
- Place the potatoes and leeks into the hot stock.
- Bring to the boil and leave to simmer for 10-12 mins or until the potatoes are tender.
- Blend the soup with a hand blender and stir in the cream, Finish with salt and pepper to taste.
- 500g Leeks
- 500g Potatoes
- 1L Vegetable stock
- 60ml Light cream
- Salt and pepper to taste
