Comforting Beef Casserole
I love super simple tasty recipes – especially when they are in the one dish and I don’t have to worry about them until they are done. This recipe was well received in our house and is delicious with some creamy mash and green veg.
Ingredients
- 2 onions chopped
- 1 clove garlic chopped
- 600g diced beef
- 2 tbsp olive oil
- 1 tbsp soft brown sugar
- 1 tbsp plain flour
- 300ml beef stock
- 200ml stout
- Salt and pepper
- 1 tsp dried thyme
- Pinch ground cloves
- 1 tbsp wholegrain mustard
- 1 tap balsamic glaze
- 3 large carrots chopped into large chunks
Instructions
- Preheat oven to 180 deg C.
- In a casserole dish, add 1 tbsp oil and brown the meat in small batches and remove.
- Add remaining oil to pan and sauté onions for two minutes then add garlic cooking for another minute. Don’t let the garlic burn.
- Add flour, sugar, stock, stout, mustard, ground cloves, thyme, some salt and lots of black pepper and bring to the boil. Add the meat back in along with the carrots.
- Cook for 1.5 hours before serving with your favourite side.
