Cranberry and Orange Muffins
These are delicious little muffins, definitely worth trying out.
Ingredients
- 2 cups flour
- 3/4 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup cranberries (fresh or frozen)
- 1 egg
- 3/4 cup orange juice
- 1/4 cup vegetable oil
- 1 tsp grated orange rind
Instructions
- Preheat the oven to 180 deg C.
- Combine dry ingredients and add in the cranberries.
- In a separate bowl, beat egg, orange juice, oil and orange rind.
- Add wet to dry ingredients all at once and stir.
- Spoon into greased muffin cups (fill 3/4 full).
- Sprinkle some sugar on top.
- Bake for 15-20 mins till lightly browned and firm to the touch.
