Lemon Drizzle Muffins

These are delicious little muffins that can be whipped up in a flash.


Serves: 6-8
Prep Time: 10 mins
Cook Time: 30-35


  • 4 lemons (zest only, for the topping)
  • 50g icing sugar
  • 1 lemon (juice only)
  • 2 eggs (beaten)
  • 85g caster sugar
  • 240ml milk
  • 100ml vegetable oil
  • 300g plain flour
  • 3 tsp baking powder
  • ½ tsp salt


  1. Mix the egg, sugar, milk and oil in a large bowl.
  2. Sift in flour, baking powder, salt and then add lemon zest. roughly mix.
  3. Spoon into muffin cases and bake in the oven temp 200c/400f/gas mark 6 for 30-35 mins until well risen and golden cool on a wire rack.
  4. Mix together icing sugar and lemon and spoon over cooled muffins.
  5. Sit back and enjoy.
