Tomato & Pepper Sauce
This versatile sauce makes a great base for all sorts of savoury meals. I use it for meatballs and a soup and also for mixing with homemade tomato sauce for Mozzarella Chicken.
Ingredients
- 2 medium red onions, peeled and finely chopped
- 2 garlic cloves, peeled and finely chopped
- 2 tbsp olive oil
- 3 peppers, any colour, deseeded and cut into chunks
- 1 x 400g tin chopped tomatoes
- 2 tsp paprika
- 1/2 tsp chilli flakes
- salt and black pepper to taste
- 100ml water
Instructions
- Place a pan over a medium heat and sauté the onions and garlic for 3-4 minutes until soft.
- Add the peppers, tomatoes, paprika, chilli flakes and water and stir to combine. Cover with a lid and simmer for 15 minutes, stirring halfway. Season with salt and freshly ground black pepper.
- You can leave it chunky or blitz with a hand blender.
